Honduras:
Servando Galo.  This award winning coffee has a caramel sweet quality, with mild acidity - a very clean cup of coffee.  With hints of lime and apple, this Catuai variety coffee is a brew to remember.

Guatemala:
San Cristobal Y Tamahu.  As a 2006 Cup of Excellence award winner, this coffee is a hybrid Caturra, Bourbon mix. Pear and quince flavor notes add a bit of zing to the sweet milk chocolate background. A truly remarkable coffee.

Single-Origin Beans

Sumatra:  
Harimau Tiger.  Being a harvest from a coop of small landowners, this bean is grown under full sun conditions without chemical fertilizers or pest control. Hand washed and dried on clay or canvas in the farmer’s yard, this coffee is collected and final processing is done in Medan before shipment. This variety of Typica produces an intense, bright coffee with a sweet finish that lingers on the tongue.

Ethiopia:
Yergacheffe.  From the birthplace of coffee, this region is south of Harrar, near Sidamo.  This shade-grown bean is raised in small plots - which prevents organic certification, but are meticulously cared for without chemicals or pesticides.  Yergacheffe is one of the world’s finest coffees; its smooth character swirled with its voluptuous fruit and floral aroma makes it a cup to remember.

Panama:
Don Pepe.  Some excellent, yet ignored, coffee originates from Panama.  Subtle, yet vivid flavors of fruit and cocoa tones dance about.  Its sweet medium intensity makes a true specialty coffee.

Columbia:
El Jordan.  Not a single coffee drinker on the planet is unaware of Juan Valdez and Columbian Supremo.
It is just that notoriety that has kept fine Columbian coffees in the background - until now.  And, for your information, ‘Supremo’ means the size of the coffee bean, not the quality of the coffee!  Columbian farms are small in size; growers unite together in co-ops or partnerships enhancing the farming process.  This lot of Columbian is vibrant and well-balanced with caramel and nutty overtones.

Black Pearl Blends


Coffee blends are the true roasters’ art. Like blending Scotch Whiskey, each roaster has his/her own ideas regarding what and how to achieve blending perfection. As roasters’ blends grow in size they try to maintain consistency. This usually means introducing lower grade coffee as a base, a practice I do not adhere to.
Like fine wines, superior coffee will vary with the seasons; it is this diversity that I celebrate! So, you will find that you are not able to order the same blends time after time. For those of you that have become accustomed to your blended coffee tasting the same year after year, I do apologize. However, I know you will enjoy the different varietals that are offered.

China Clipper:
Among my many hobbies is the study of history. It struck me that the 19th century clipper ships that plied the Pacific would stop at exotic ports of call where, I imagine, the kitchen staff would prepare elaborate feasts along with decadent coffee for the First Class passengers.  This particular blend is a combination of Mexican Crystal, Hawaiian Kauai Reserve and Sumatra.  It is a brilliant, fresh coffee with flavor nuances that I will let you discover.

Java Dream:
Dark Roasted Sumatra takes center stage! By adding the chocolate tones of coffee from Guatemala and the dazzling zip of Kenyan AA, I believe you have a world-class coffee.

What can I say about decaf?  Ignored by the world of specialty coffee; an orphan cast adrift in a sea of mediocrity - until now.  We take coffee from the Huila region of Colombia and use a combination of water and EA process to decaffeinate the beans. Unlike an all-water or all-EA process, this procedure using EA derived from natural sugar cane leaves the beans with significantly more flavor, which ends up in your coffee mug. I know you will enjoy this remarkable decaf.
